*ENCHILADA SAUCE – OPEN CAN, RINSE (SUBSTITUTE SALSA OR TACO SAUCE IF THAT’S ALL YOU HAVE)
*SHREDDED CHEDDAR OR MEXICAN CHEESES – OPEN BAG
* BROWN GROUND TURKEY OR GROUND BEEF WITH TACO SEASONING.
* FLOUR TORTILLAS.
ASSEMBLE: COAT BOTTOM OF 9X13 GLASS PAN WITH ENCHILADA SAUCE. FILL TORTILLAS WITH BEEF, RICE, BEANS, CHEESE ROLL UP AND PLACE SEAM SIDE DOWN IN BAKING DISH. COVER WITH MORE SAUCE. TOP WITH MORE SHREDDED CHEESE. SPRINKLE ON SOME CILANTRO (FRESH OR DRY- WHO HAS FRESH CILANTRO ON HAND – COME ON!) TOSS IN 350 DEGREE OVEN TO MELT CHEESE (OR TOSS IN MICROWAVE) SERVE WITH A SIDE OF SHREDDED LETTUCE, CORN, SOUR CREAM OR AVOCADO.
BONUS: IF YOU HAVE EXTRA MEAT/BEANS/LETTUCE/CORN ETC. YOU CAN MAKE YOURSELF A LOVELY TACO SALAD THE NEXT DAY. JUST COMBINE THE ENCHILADA SAUCE OR SALSA OR TACO SAUCE WITH RANCH DRESSING TO MAKE A GREAT DRESSING. CRUMBLE A FEW TORTILLA CHIPS FOR CRUNCH AND YOU ARE GTG! (GOOD TO GO)
